Black Salt (Kalanamak) Rice

Only rice harvested in this specific region has the right to bear the Kalanamak name. Non-basmati rice with medium-long, thin grain length is classified as kalanamak rice.

In comparison to Basmati, which has an amylose level of 24% and higher, close to 20%. Amylose levels that are too high may result in stiff, dry rice. The grains of chawal that have a medium amylose level, between 16% and 22%, often cook more easily and cling together more easily.
